Sun-Dried Tomato and Artichoke Pasta Salad

1 box bowtie pasta
cherry tomatoes, halved
1 8 oz jar Mezzetta® Sun-Ripened Dried Tomatoes, drained and roughly chopped
1 14.5 oz jar Mezzetta® Marinated Artichoke Hearts, drained and roughly chopped
mozzarella balls
a few large handfuls of spinach

Dressing:
1/2 cup olive oil
2 tbsp red wine vinegar
1/2 lemon, squeezed
1 tsp oregano
1 tsp maple syrup
sea salt and pepper to taste

Cook pasta according to package directions. Drain pasta and mix with the rest of the ingredients and 1/2 of the dressing. Add more dressing as needed. Chill in the fridge. Serve and enjoy.
